Most American Single Malts are aged, aligning with American tradition, in new American Oak. In contrast, our single malt whisky is aged in a refilled (also called second-fill) ex-Bourbon cask, just like they do in Scotland.
Barley is a “gentler” grain than corn and often accepts more flavor from the cask than its typical American counterpart, corn. This whisky gives that grain a chance to shine, without being overshadowed by the oakiness inherent to new, freshly charred casks. The result is a more barley-forward, complex, light, whisky which is then cut with water from the Holy Cross Wilderness - the water our town is lucky enough to call our own - for a taste that is truly unique. Add a drop or two of water and notice how these flavors open up.

This particular cask aged three years in a 53-gallon ex-Bourbon barrel (not re-toasted, not re-charred) at high-elevation. (This makes for faster aging since the whisky goes in and out of the wood more frequently due to our enormous swings in temperature.) We are pleased to offer this gem to you.

TASTING NOTES
Balanced sweetness, caramel, oak, vanilla. Sweet fruit and grain, slight leather, browned butter, slight fruit, caramel, and vanilla, complex, gentle oakiness. Finishes with slight cocoa. Balanced, pleasant, and light.

Our Labels, A Nod to History
Our labels are based on color schemes we discovered while browsing transcontinental steamship passenger tickets from the early 1900s. For example, our Blended Malt label (above) is based on this steerage Passenger Contract for Passage on the Cunard Line Steamer RMS Ivernia, Departing Copenhagen to Minnesota, via Liverpool and Boston. Dated 11 March 1905.
