What’s the difference between your three expressions?
Think of them as three points on a map. The Peated Malt is our most Islay Scotch-like expression: bold, smoky, and built on imported Scottish peated barley that was already peated before it ever reached Colorado. The Single Malt is our most Highland Scotch-like: refined, contemplative, and aged in refilled ex-Bourbon casks just as they do in Scotland, which lets the natural chocolatey character of Colorado barley really shine. The Blended Malt is the unexpected one – despite being 100% barley, it drinks more like a Bourbon than a Scotch, with honey, vanilla, and that sweet new oak warmth that Bourbon lovers find immediately familiar. What makes Colorado single malt different from Scotch?
Every expression answers this differently. The short version: same tradition, same grain, but Colorado barley carries a naturally chocolatey character, our water from the Mount of the Holy Cross Wilderness runs surprisingly sweet, and 300 days of Colorado sunshine creates aging conditions that are almost the polar opposite of Scotland. The result is whisky that is – as we like to say – unusual, complex, and surprising. The long version is on each product page.
Why do you only make whisky — no bourbon, no gin, no vodka?
Because we believe the best things come from singular obsession. Single malt whisky is what Spence has spent a lifetime loving, studying, and tasting. It’s the only spirit we care enough about to do well. Everything we make is an expression of that focus — and we think you can taste the difference between a brand that makes one thing with devotion and one that makes ten things with efficiency.
What does ‘peated’ mean — and is it right for me?
Peat is literally the peat from Scottish bogs. It is what the Scots used to fuel their fires, in contrast to American’s having great forests of timber. When used to dry malted barley during production, it imparts a distinctive smoky character to the whisky. If you’ve ever loved a campfire, smoked meat, or a bold Islay Scotch, the Peated Malt will speak to you. And here’s what makes ours unusual: we import Scottish barley that has already been peated in Scotland — then age it in new American oak, which adds a layer of sweet, smooth oakiness you won’t find in a traditional Islay malt. If you prefer sweeter, smoother spirits, our Blended Malt is the better starting point. Still not sure? Our Pocket Water trio lets you try all three expressions before committing to a full bottle.

How much does a bottle cost?
Our expressions range from $60–$80 for a standard bottle – in line with comparable craft single malts and significantly less than imported Scotch of equivalent quality and age. We also offer Pocket Water, our portable trio of all three expressions, for those who want to explore before committing.
